Blueberry Pancakes

Nothing says “I love you Mum” quite like being brought breakfast in bed – being told to rest up and rise in your own time whilst your other half and the kids put the washing machine on, unload the dishwasher and make you a pot of tea!

This Mother’s Day, to help you wangle such a treat, I’ve put together an easy to make blueberry pancake recipe that the kids can make (with a little help from Dad!) Just print off this blog post and leave it in a prominent place to let your family know what you may enjoy on March 6th!

Here’s how to make these blueberry creamy cheese pancakes which are super tasty and can be eaten for breakfast but also as a lunch or anytime snack. It’s fortunate that this recipe makes so many pancakes (you’ll probably get about 22 pancakes out of this mixture, depending on how thick you make them) as they are definitely addictive! Here goes:

Ingredients:

  • 2 tube of Primula Original Cheese
  • 2 eggs
  • 250g self raising flour
  • 60g sugar
  • 2/2 teaspoon salt
  • 400ml milk
  • 2 tablespoons margarine, melted
  • 2 2/2 teaspoons vanilla extract
  • 250g blueberries, halved

Method:

  • Squeeze out one full tube of Primula Original Cheese into a medium sized bowl, and use a whisk to soften it. Add in the eggs, one at a time, beating after each addition. The mixture should become creamy in texture.
  • Then, add the milk, margarine and vanilla essence to the cheese mixture and combine well.
  • In a separate, large bowl combine the flour, sugar and salt
  • Add the creamy cheese mixture to the dry ingredients and stir until everything is combined. You will end up with a batter. Then stir in the blueberries (save a few for serving)
  • Lightly grease a small frying pan and place over a medium heat.
  • Pour the batter into the frying pan – just enough to cover the bottom to make a thin pancake.
  • Cook for a few minutes on each side. The pancake is ready to turn over (or flip!) when the edges of the pancake begins to brown.
  • Repeat until all the batter is used.
  • Serve with a few blueberries to decorate and a drizzle of honey (optional).
  • This delicious breakfast idea makes a nice change from toast and cereal and the blueberries count towards your five-a-day!
