Here’s a slimming recipe for a butternut squash soup. I enjoy making this from time to time. I tend to only buy in butternut squash every now and then as it is so tough to cut but it is always worth it as this soup is really tasty.
Here is an ingredient list:
- Butternut squash
- 2 red onion
- 2 carrot
- low cal cooking spray
- Vegetable stock 600ml
- Seasoning to taste
Method:
- Spray saucepan with fry-light or other low cal cooking spray and pre-heat
- Cut the butternut squash into chunks, taking the skin off first. De-seed and put chunks into a saucepan
- Peel and chop the carrot, putting the chunks into a saucepan
- Sweat the vegetables for about 20 minutes until softened, stirring often
- Add the vegetable stock and seasoning then bring the pan to the boil
- Once boiling, turn down the heat and simmer for 20 minutes
- Remove from heat and use a hand blender to whizz up the ingredients
- Serve immediately
